Characteristic
Malt extract is classic beer wort. It is made from light barley malt. Due to special technology, under the influence of natural malt enzymes contained in grain raw materials, starch is transformed into healthy natural sugar, and proteins into simpler compounds that contain nitrogen. The product is environmentally safe, as sugaring is carried out by the enzymes of the malt itself, preservatives and stabilizers are not used.
Usage
Malt extracts are widely used in the bakery, confectionery, brewing and non-alcoholic industries, in pharmacology and in the field of dietary nutrition. Dark malt extracts are used to saturate the color and improve the taste of dark beer in brewing. Extracts are an excellent natural alternative to artificial dyes in baking, they give baked goods natural sweetness, natural taste and aroma. The color of the bread crust improves due to the interaction of amino acids and simple sugars in the malt extract. This product has a beneficial effect on the quality of the dough, contributes to the stabilization of its properties. In other words, with the use of malt extracts, the processes on which bread baking is based are accelerated and revived.
